Sticky Barbecue Fillets
Quorn Fillets marinated & then baked in a delicious sticky homemade barbecue sauce served with baked sweet potato wedges.
Ingredients
- 10 Quorn Fillets
BBQ SAUCE
- 1 tbsp oil
- 150g onion, finely chopped
- 2 garlic cloves, chopped
- 2 tsp smoked paprika
- 600g chopped tinned tomatoes
- 2 tbsp tomato puree
- 4 tbsp honey
- 3 tbsp white wine vinegar
- 2 tbsp Worcestershire sauce
- 2 tsp mustard
- 50g cheese, grated (optional)
Method
- Heat the oil and cook the onion and garlic for 3-4 minutes until softened.
- Add all of the remaining ingredients except for the cheese. Bring to the boil stirring and then reduce the heat and simmer for 20 minutes.
- Preheat the oven to 180C/Gas Mark 4.
- Blitz the sauce with a stick blender or in a food processor for a smooth sauce or leave chunky if preferred (add a little water if the sauce is too thick).
- Place the Quorn Fillets in a baking tin and cover with the barbecue sauce.
- Bake for 10 minutes and then sprinkle over the grated cheese if using and bake for a further 5 minutes or until core temperature is reached and the cheese has melted.
- Slice the Quorn Fillets and serve with baked sweet potato wedges.
Tip - parboil the sweet potatoes and brush with barbecue sauce and a little oil before roasting.
