Quorn & Charcoal Okonomiyaki
Layered vegan charcoal pancake with stir-fried Quorn & vegetables, smoked vegan mayo and coconut bacon.
Ingredients
- 500g Quorn Vegan Pieces
COCONUT BACON
- 50g shaved coconut
- 1 tsp smoked paprika
- 1 tsp maple syrup
- 1 tsp soy sauce
PANCAKES
- 300g self-raising flour
- 300ml water
- 180g aquafaba
- 2 tsp charcoal powder
- ¼ tsp salt
VEGAN MAYO
- 60g aquafaba
- 1 tsp Dijon mustard
- 50ml white wine vinegar
- 1 tsp liquid smoke
- 300ml rapeseed oil
STIR-FRY
- 1 Chinese cabbage, finely shredded
- 2 red peppers, finely sliced
- 1 bunch spring onion, finely shredded
- 2 tsp oriental base (major), mixed with 100ml water
- 3 tbsp pan Asian vegetable stock powder
- 2 tsp oil, for frying
Method
- For the coconut bacon place all the ingredients into a frying pan and cook gently for 5 minutes until brown and crispy.
- Then add the ingredients for the pancake batter to a bowl and whisk until combined, allow to rest for 10 minutes. Place into a piping bag (no nozzle).
- To make the vegan mayo; mix together the aquafaba, mustard, white wine vinegar and liquid smoke. Gradually whisk in the oil until the mayonnaise emulsifies and thickens. Season to taste.
- Heat some oil in a non-stick frying pan, snip 1 cm off the end of the piping bag and pipe a lattice of mixture into the pan to make a circular pancake with lattice style holes. Cook for a minute on both sides then add a spoonful of the pancake batter and cook for 2 more minutes until crisp and golden on both sides and repeat until you have used the batter and have 10 pancakes. Remove from the pan and keep warm.
- Heat a splash of oil in a pan then add the Quorn Vegan Pieces and fry gently until golden. Add the stir-fry vegetables and cook for 3-4 minutes until softened. Sprinkle the Asian stock into a pan, add the oriental base and 300ml water, bring to the boil and simmer for 2-3 minutes.
- To serve; layer the pancake with the stir-fry mixture topped with coconut bacon and a drizzle of smoked vegan mayo.
Tips - this filling will also work really well using a steamed bao bun instead of pancakes.
