Piri Piri Fillet
Quorn Fillet marinated in tangy Piri Piri sauce, served with yellow vegetable rice & a crunchy slaw of white cabbage & carrots in a mayonnaise dressing.
Ingredients
- 10 Quorn Fillets
- 150ml Piri Piri sauce
- 350g long grain rice
- 1 tsp turmeric
- 200g peas
- 200g tinned sweet corn, drained
- 1 red pepper, finely diced
Method
- Marinate the Quorn Fillets in the piri piri sauce for 20 minutes.
- Place the fillets onto a baking tray and cook in a preheated oven at 200C/Gas Mark 6 for 12-15 minutes or until core temperature is reached.
- Meanwhile, cook the rice according to pack instructions adding the turmeric to the cooking water.
- 3 minutes before the end of the rice cooking time add the peas, sweetcorn and pepper.
- Drain the rice, place onto warmed serving plates and top with the piri piri Quorn Fillet.
Tip - as an alternative try marinating Quorn Fillets in a BBQ sauce.
