BBQ Fillet Burger
A succulent Quorn Fillet marinated in BBQ sauce, served in a bun with a crispy mixed side salad & baked sweet potato wedges.
Ingredients
- 10 Quorn Fillets
- 150ml BBQ sauce
- 700g sweet potato, peeled and cut into wedges
- 30ml vegetable oil
- Seasoning
- 10 baby gem lettuce leaves
- 350g cherry tomatoes, halved
- 200g cucumber, diced
- 80g tinned sweetcorn, drained
- 10 burger buns
- 100g mixed salad leaves
Method
- Pre heat the oven to 200C/Gas Mark 6.
- Marinate the Quorn Fillets in the BBQ sauce for 20 minutes.
- Toss the sweet potato wedges in the oil, season and spread out on a baking tray. When the Quorn has marinated bake the sweet potatoes for 20-25 minutes until golden and soft in the centre.
- Place the Quorn Fillets onto a baking tray and cook for 12-15 minutes or until core temperature is reached.
- Meanwhile, prepare the salad. Take 10 little gem lettuce leaves, place on the serving plates and fill with the tomatoes, cucumber and sweetcorn.
- Divide the mixed salad leaves between the burger buns, and top with the cooked Quorn Fillet.
- To serve: add the Fillet burger to each plate alongside the salad with a portion of baked sweet potato wedges.
Tip - to make the wedges healthier, cook with the skins left on.
